Arroz doce oatmeal 🍚
I don’t usually go for oatmeal for breakfast, but since I got diagnosed with SIBO, I’ve been having a hard time digesting a lot of vegetables and fruits, so I’ve been trying to find other options. Luckily, oatmeal is one of them! Instead of just eating a boring bowl of oatmeal, I tried to make it taste like “arroz doce” (Portuguese rice pudding), and oh my! This version is creamy, flavorful, and not too sweet! It’s the perfect comforting, and cozy breakfast 🤍
Ingredients:
1.5 cups rolled oats
1.5 cups plant-based milk (I usually use organic soy milk because it’s creamier), room temperature
1.5 cups water, room temperature
1 egg yolk, room temperature
1 cinnamon stick
Some lemon zest, to taste
1/8 cup maple syrup (or more, if needed)
Pinch of salt
Directions:
In a bowl, whisk 1/2 cup of the milk with the egg yolk. (Avoid adding the egg directly to a hot pan, as it may scramble.)
In a saucepan, combine the oats, remaining milk, water, cinnamon stick, lemon zest, maple syrup, and salt.
Add the milk–egg mixture and stir to combine.
Cook over medium heat for about 10 minutes, stirring occasionally, until the oats are creamy and cooked through.
Serve warm, topped with cinnamon and additional maple syrup if desired.
